Chicken Athena


  • 4 M&M Food Market Boneless Chicken Breasts
  • 100 g feta cheese
  • 20 grape tomatoes, cut in half
  • 2 Tbsp olive oil
  • 1/2 cup water
  • 1/2 tsp each salt and pepper
  • 2 Tbsp black olive tapenade (or 6 whole black olives—sliced and pitted—per breast


  1. Preheat oven to 400ºF.
  2. In a large casserole dish, place the chicken breasts, black olive tapenade,  feta cheese and tomatoes.  
  3. Drizzle with olive oil, and season lightly with salt and pepper.
  4. Add ½ cup of water and cover tightly with aluminum foil.
  5. Bake until the chicken is cooked about 30-45 minutes from frozen,  20 minutes from defrosted.
  6. Serve with M&M Food Market Grilled Mini Potatoes that have been seasoned with salt and pepper and drizzled with lemon juice, olive oil and crushed garlic.
